When you get a resume and go through interviews at your restaurant, you’re probably looking for hard skills – how’s their knife skills?  Can they cook – where have they worked? Have they served tables before?
Those are basic skills – things you’d expect anyone showing up to have.  AND, they’re something that you can teach if they happen to be missing or not very strong.
Y’know what you can’t teach?  Personality.  Are they a good person, do they smile easily, and are they friendly?  Will they fit into the culture of our restaurant. Â
Hire the smile, you can always work on the rest.
