Easier said then done…I see such a lack of care when it comes to portioning over and over again. Yet it’s the cornerstone for maintaining food cost. Stop allowing your cooks to grab an order of fries with their hands, stop allowing cooks to grab an order of pasta with their hands. You portion your proteins but you don’t portion everything else…why?
