When you servers keep track of how much they sold in in a shift, how much they go in total tips, and then how much they tipped out, they will have a benchmark for improvement. Most of your servers have no idea what percentage they are making on total sales or even what their average sales are. If they don’t measure anything, how will they ever improve.
Conduct a training and provide your servers a simple form they can complete at the end of every shift. Show them how to use their smart phones to calculate the percentages and then reward anybody who tracks their tips for 30 days.
Your sales will improve, your customers will be more satisfied and your servers will MAKE MORE MONEY when they start tracking their tips.
