Do you store all your beer in cases, or do you have loose bottles sitting on a shelf?
The theory is that if you keep your inventory loose on a shelf it’s a lot easier for one bottle to go missing – whether it’s a staff member drinking it or the bartender serving it to a friend without ringing it up.
Not only is it easier for you to see if an entire 6 pack or case is missing when you’re going through your walk-in, but people are much less apt to grab and entire case because they know how easy it is to spot.
ACTION ITEM
This is a simple but good general practice: train your entire bar staff to always store bottles of beer in their cases.
